Octopus Salad
First prepare the octopus: remove intestines by the head, bag with ink and carefully wash the octopus. Tenderize the octopus with a kitchen hammer and boil for about 2-3 hours. Time of cooking depends on the hardness of the meat. When done, leave the meat to cool off in the water it boiled in. Take out and cut into small circles. Add vinegar, half a cup of oil, salt, pepper, garlic and parsley. Leave over night in a cool place. When cooled down, add potatoes, mix together and serve.
